BOUDIN


1/2 CUPS CHOPPED ONION

1TABLESPOON CHOPPED PARSLEY

1/2 RIB CHOPPED CELERY

3/4 TEASPOON SALT

1/2 TEASPOON BLACK PEPPER

3/4 TEASPOON RED PEPPER

3/4 CUPS COOKED RICE

2 GREEN ONION TOPS CHOPPED

4EA CRAPPIE FILLETS BOILED.

IN A SAUCE PAN BOIL CRAPPIE IN SALT WATER GET THE WATER ON
FULL BOIL ADD THE CRAPPIE FILLETS BRING BACK TO A BOIL FOR TWO MINUTES REMOVE
FILLETS.
IN A PAN OR RICE COOKER ADD RICE AND ALL INGREDIENTS EXCEPT FILLETS PLUS 1/2 WATER AND 1/2 CHICKEN BROTH FOR COOKING THE RICE.
AFTER THE RICE WITH SPICES ARE COOKED MASH UP THE CRAPPIE FILLETS MIX INTO THE RICE MIXTURE AND SERVE.

ALSO,

If you leave out the boiled crappie and make the rest of the recipe


it is a great side dish with fried crappie instead of potatoes.
