Lightest hushpuppies

1 cup corn meal

1/2 cup flour

2ea eggs

1/2 cup milk

1/2 teaspoon lawerys salt

1/2 teaspoon fresh ground black pepper

1/2 teaspoon baking powder

1/4 teaspoon baking soda

1/8 cup bacon grease or (option veg oil)

1/4 onion diced.

in a bowl mix all dry ingredients till blended

in a different bowl mix milk, eggs, oil, and diced onions.

beat to a froth then pour into the dry ingredients mix with a fork

until smooth . don't mix again. let set for 10 minutes.

drop into hot grease 375 degrees med high heat.

by the spoon full cook till golden brown keep turning till

browned on all sides when they float they are done.

makes 24 tablespoon size puppy's

A tip for ya; look up the peanut brittle recipe, great snack!

whipped up 1/2 batch of these for me and the wife

to go with a big mess of pan fried crappie.

these are so light and good. I just cut everything

in 1/2 on the recipe and they turned our just great.
