 Post subject: HOME MADE POTATO SOUP.

NOTHING BETTER AFTER A DAY OF FISHING.


8 slices bacon

1 cup finely chopped onion

4 cups of cubed potatoes

2 cans cream of chicken soup

2 soup cans of milk

in a 3 qt. sauce pan cook bacon until crisp.
remove bacon set aside, pour off all fat but 3
tablespoons. add onions and brown. add potatoes and enough water to cover. cook covered until potatoes are fork tender about 15 minutes. drain water , Take about 1/2 the potatoes out and mash them up good and put them back in the pot. in a bowl mix the cream of chicken soup and 2 soup cans of milk till smooth then pour over the potatoes in the pot.
heat through. do not let it boil. salt and pepper to taste. serve. ( crumble bacon on top)

I make this the day before a fishing trip then when we get home after fishing i just have to heat it and serve great when your to tired to cook. After pulling in all those fish all day.

Ps if you like your soup thicker as i do i take about 1/2 the potatoes out after they cook and mash them then add back to the soup.

never tried that i just use the white onions

they give the soup a great flavor when caramelized. Not sure how the green onions would
alter the taste will have to give that one a try.
