. Crappie croquettes. oven baked

1/4 cup cracker crumbs (more if needed)

1 ea Large egg beaten

1 1/2 table spoons of mayonnaise

1/4 cup chopped green onions

1/4 cup dried parsley

1/2 teaspoon garlic salt

1/2 teaspoon lemon pepper

8 ea, crappie fillets ( ground)

mayonnaise as needed

1/2 cup cracker crumbs.

bay seasoning to taste.

. directions:

cut crappie fillets into chunks and ground up in food processor
or in blender till fine.
mix first 7 ingredients together then add ground crappie mix well.
if it seems dry add mayo until it seems moist. form into paddies
and refrigerate for 1 hour to firm up. mix rest of dry ingredients
in a bowl. when oven is hot, spread mayo on one side of patties and
lay Pattie in cracker crumbs. mayo side down add mayo to top side and
cover with cracker crumbs.place on cookie sheet sprayed with cooking spray
bake in 425 oven for 10 minutes turn over and cook ten minutes on this side
check to see if they are done to your likeness.

or you can cook deep fry in 350 degree oil for 2 minutes on each side.
or till they float.

I use different seasonings but almost the same process.....I don't care how crappie is cooked it turns out tasty.....
I've been getting away from fried and can't say I'm missing it although fried is the tastiest way to eat them.....
